Glutamic acid is a non-essential amino acid that is the most abundant excitatory neurotransmitter in the brain. Its sodium salt, monosodium glutamate (MSG), is responsible for the umami taste, one of the five basic tastes. It plays key roles in nitrogen metabolism.
