No chemical reaction — steam distillation is a physical separation exploiting Dalton's Law of partial pressures. Terpenes (C₁₀H₁₆) and terpenoids co-distill with steam below 100 degrees C because the total vapor pressure exceeds atmospheric pressure when the partial pressures of water and oil sum.
