Descripción general
Potassium bitartrate, known as cream of tartar, is a byproduct of winemaking that crystallizes in wine barrels. It is the potassium acid salt of tartaric acid. Combined with baking soda, it creates baking powder. It is used to stabilize whipped egg whites.
